Recipe: Lemon Raspberry Pie

I originally found this recipe on Pinterest, + I ended up making it twice for Christmas.  I took the first to my brother-in-law's family's house for Christmas Eve, + after tasting it there, I made a slight tweak to the original recipe when I made it the second time on Christmas morning.  I took the second pie to my cousins' house on Christmas evening, + it seemed to be really well liked!  Also, it was super easy to make, + really didn't take a ton of effort.  If you are a fan of Key Lime or tart Lemon Pie, you will love this recipe!

Lemon Raspberry Pie
1 graham cracker crumb pie crust
1 (10-oz.) package frozen red raspberries
1 T. cornstarch
3 egg yolks
1 (14-oz.) can sweetened condensed milk
1 cup lemon juice from concentrate
*original recipe called for 1/2 cup, but I preferred the lemon flavor to be more prominent

Preheat oven to 350 degrees.  In small saucepan, combine cornstarch + raspberries.  Cook on medium low + stir until thickened and clear.  In medium bowl, beat egg yolks; stir in sweetened condensed milk + lemon juice. Pour into crust; bake 8 minutes.  Spoon raspberry mixture evenly over top.  Chill 4 hours or until set. 
*Optional: spread with whipped topping and serve.
