I made this Crock Pot Brunch Casserole for our Girls' Brunch this past weekend, and I can't believe I hadn't heard of doing a crock pot breakfast before this! My guests seemed to dig the dish, so I wanted to share. It's a great go-to for when you have house guests or just a hungry family or group of folks to serve for breakfast/brunch. (What a great idea for the holidays!) Of course, I found this gem of a recipe on Pinterest.
Crockpot Brunch Casserole (Yields 8-10 servings.)
Ingredients:
6 - 8 strips of bacon (I made mine vegetarian style to accommodate a couple of guests)
1 onion peeled and chopped
1 clove carlic, peeled and minced (I used crushed garlic)
1 red or green pepper, seeded and chopped
1 (2 lb) bag of frozen hash browns
3 cups shredded cheese
12 eggs
1 cup whole milk
1 tsp dried dill
1/2 tsp salt
1/2 tsp pepper
Directions:
Spray crock pot with non-stick cooking spray.
Cook bacon until crisp, cool, and then chop into 1/2 inch pieces. Set aside.
Saute onion, garlic, and bell pepper for 5 minutes.
Add 1/3 bacon and 1/3 of the onion, garlic, bell pepper mixture and 1/3 cheese.
Repeat layers, ending with cheese.
*Note: make sure crock pot is not solidly packed so that egg mixture can soak all the way to bottom.
In a large bowl, mix eggs, milk, dill, salt, and pepper.
Pour over ingredients in crock pot, cover and turn on low.
Cook for 8-10 hours.
